What a difference a year makes.
Last year, on Father's Day, we spent the morning unloading a giant u-haul into two large storage units and moving my mom and sister into our tiny 10' x 10' extra bedroom. Then we took Beej out to lunch where we saw a ton of people we knew and no one even mentioned the obvious--my dad was gone. It was awkward. Basically, it was just a long, emotional and exhausting day.
This year was much different. I missed my dad--a lot. But this time around the day was much more lighthearted. What a joy Grace is, she's a wonderful reason to celebrate! And I had planned quite a bit of things to try and make Beej's 1st Father's Day a memorable one.
Beej slept in while I made one of his favorites: Eggs Benedict...for the first time ever! I followed The Pioneer Woman's recipe. The final verdict was just okay. This was surprising to me because I have tried a number of Ree's recipes before and so far really liked every one of them. He loved the way the poached eggs turned out, but the sauce tasted, in his words, "very buttery". Which makes sense, since the recipe calls for a whole lotta butter! I will have to do some research and try some other sauce recipes. He did tell me that even though he didn't love it, he was so glad I went out on a limb to try and make something he loves. It's the thought that counts, right?!
Grace gave Beej her gift right after breakfast. The first of many cheesy "dad" gifts he'll receive over the years.
